Classic Chocolate Chip Cookies with Quail Eggs

Ingredients
3/4 cup butter, room temp
1 cup brown sugar
1/3 cup sugar
8 quail eggs
1 cup + 2 tbsp All purpose flour
1 tsp salt
1 tsp baking soda
1 cup chocolate chips
Instructions
In a bowl, cream butter with both sugars until light and fluffy using a hand blender or stand up mixer.
Add quail eggs and mix until incorporated.
Add flour, salt and baking soda and mix by hand until it becomes a dough. Stir in chocolate chips.
Line a tray with parchment paper and scoop dough onto tray. At this point, it is completely fine to place the cookie dough scoops close together. You are going to let the cookie dough rest in the fridge for at least an hour (or 30 minutes in the freezer). By doing this, the cookies will bake evenly and it will prevent them from spreading out too much as they bake. You can also freeze the cookies and bake them from frozen! Just bake them for an additional 5 minutes or until golden.
Preheat oven to 325F and bake cookies for 8-10 minutes or until golden.
