Verde Fried Quail Egg Tostadas

Topped with a colorful medley of thinly sliced red onions and fresh cilantro, these tostadas are not just a treat for the taste buds, they’re also a feast for the eyes. A word of caution, though — these bold and delicious flavors are so addictive you’ll be craving them for breakfast, lunch and dinner!
Ingredients
8 corn tortillas
Canola or vegetable oil for frying
1/2 cup salsa verde
16 quail eggs
1/2 cup shredded cheese of your choice
1 can of refried beans
1/2 cup thinly sliced red onions
Cilantro for garnishing
Instructions
Heat enough oil to medium-high heat in a large frying pan to submerge corn tortillas.
Fry tortillas until golden and crispy, around 4 minutes on each side. Once ready, remove from oil and place on a paper towel to remove excess oil.
Heat a medium frying pan to medium heat and add 2 tbsp of salsa verde to one half of the frying pan and another 2 tablespoons on the other.
Once salsa verde is boiling, add 2 quail eggs to each salsa verde section and cook for 1 minute.
Add shredded cheese on top of quail eggs, and let cook for 3 more minutes. You want the cheese to be crispy and for the eggs to absorb most of the salsa verde.
While the eggs are cooking, spread refried beans onto your tostadas (fried corn tortillas) and set aside.
Once ready, add your fried quail eggs to your tostadas and garnish with sliced red onions and cilantro.
