Chef Kyle's Ham, Cheese, & Quail Egg Bagel Bites

Brunch just got a fun little upgrade. These ham, cheese, and quail egg bagel bites are a playful twist on a classic combo—melty, savoury, and topped with sunny-side-up Spring Creek quail eggs. Chef Kyle Crawford keeps things simple and satisfying, making this the perfect bring-along for your next brunch spread.

Ingredients

    • 1 sourdough baguette, sliced into 8-12 thick rounds
    • Mayonnaise
    • Dijon mustard
    • 150-200g thin sliced sandwich ham
    • 60-80g cheddar cheese, grated
    • 8-12 Spring Creek quail eggs
    • ¼ cup chives, finely sliced

Instructions

  1. Preheat your oven to 425 F.

  2. Spread mayo and Dijon mustard onto each baguette round.

  3. Top with ham and grated cheese. Bake for 5-7 minutes, or until the cheese is melted. Set aside.

  4. Heat a large non-stick pan over medium heat (add a touch of neutral oil if necessary). Gently fry the quail eggs sunny-side up for 3-4 minutes, or until the whites are set. 

  5. Carefully top the bagel bites with quail eggs and garnish with chives. Serve as a personal snack or a crowd-pleasing brunch app!
