Chef Kyle's Ham, Cheese, & Quail Egg Bagel Bites
Brunch just got a fun little upgrade. These ham, cheese, and quail egg bagel bites are a playful twist on a classic combo—melty, savoury, and topped with sunny-side-up Spring Creek quail eggs. Chef Kyle Crawford keeps things simple and satisfying, making this the perfect bring-along for your next brunch spread.
Ingredients
- 1 sourdough baguette, sliced into 8-12 thick rounds
- Mayonnaise
- Dijon mustard
- 150-200g thin sliced sandwich ham
- 60-80g cheddar cheese, grated
- 8-12 Spring Creek quail eggs
- ¼ cup chives, finely sliced
Instructions
Preheat your oven to 425 F.
Spread mayo and Dijon mustard onto each baguette round.
Top with ham and grated cheese. Bake for 5-7 minutes, or until the cheese is melted. Set aside.
Heat a large non-stick pan over medium heat (add a touch of neutral oil if necessary). Gently fry the quail eggs sunny-side up for 3-4 minutes, or until the whites are set.
Carefully top the bagel bites with quail eggs and garnish with chives. Serve as a personal snack or a crowd-pleasing brunch app!
