Chorizo Potato Tacos With Quail Eggs

Forget about Taco Tuesdays… when they’re this good you’ll want to eat them every day of the week!

Tacos reach a whole new level when packed full of potato and chorizo and topped with gently fried quail eggs, fresh cheese, cilantro and hot sauce.. if you dare!

Ingredients

    • 2 tbsp extra virgin olive oil
    • 4 medium yellow potatoes, finely diced
    • 1 shallot, finely diced
    • 9 oz chorizo
    • 8 corn tortillas, lightly charred
    • 3 tbsp cilantro, chopped
    • Salt and pepper to taste
    • 1 tbsp butter
    • 8 quail eggs
    • Queso fresco or Feta, crumbled
    • Hot sauce (optional)

Instructions

1.

Start by heating olive oil in a medium-sized pan. Add shallots and sauté for 2 minutes, stirring constantly.

Add diced potatoes and stir frequently until soft and golden, 3-5 minutes.

Add chorizo and cook until chorizo is cooked through and potatoes are tender, continuing to stir.

Remove from heat and set aside.

Place warm tortillas on plates and divide the chorizo and potato mixture evenly.

6.

Heat a nonstick pan over medium heat. Add 1 tbsp butter and fry the quail eggs for 2-3 minutes, making sure to keep the egg yolks runny.

7.

Once cooked, place 2 fried quail eggs over each taco.

8.

Garnish with chopped cilantro, queso fresco or feta and hot sauce.
