Ingredients

    • 18 quail eggs
    • 1/4 cup regular soy sauce
    • 2 tbsp dark soy sauce
    • 2 tbsp rice wine vinegar
    • 1/4 cup water
    • 1 tbsp monk fruit sweetener
    • 2 small red chili peppers, chopped with seeds
    • 3 garlic cloves, chopped
    • Roasted sesame seeds (optional)

Instructions

1.

If your quail eggs are refrigerated, let them come to room temperature. Boil a pot of water. Cook quail eggs in boiling water for 2 ½ - 3 mins. Place cooked quail eggs in ice-cold water to cool down.

2.

While quail eggs are cooling, mix soy sauce, dark soy, rice wine vinegar, monk fruit sweetener, water, chilies and garlic together in a bowl/jar.

3.

Gently peel quail eggs and place eggs in spicy marinade sauce. Cover jar/bowl and marinate eggs for at least 2 hours (preferably overnight) in refrigerator.

4.

When ready to eat, spoon out quail eggs and marinade into a serving bowl and garnish with some roasted sesame seeds.
